Peanut Butter Snowballs

These are good.... I made some yesterday and today. It's pretty much a New Year's tradition. Here's the recipe:

RICE KRISPIES PEANUT BUTTER BALLS

2 c. peanut butter
1 stick butter, melted
1 (1 lb.) powdered sugar
3 c. Rice Krispies
1 lb. chocolate, melted (suggested Nestle's semi-sweet chocolate bits)

Mix first 4 ingredients; roll into balls; dip into chocolate.


You can use white chocolate chips or peanut butter chips for the dip, too; that is what we did this time. The kids like those better than the semi-sweet chocolate dipped ones. They call them snowballs and mudballs, respectively. The snowball ones are a bit like those white Reese's peanut butter cups you can get.

Yesterday for New Year's Eve dinner we had Costco lasagna, Costco garlic bread, and for sides, stoneground multigrain crackers with Costco artichoke/jalapeno dip, and champagne. The champagne we opened yesterday was a little bit vinegary, but the one we had today was pretty good!

Mmmm. Costco dinners are delicious. :) And the peanut butter balls look good. We'll have to make some. Geoff is a peanut butter/chocolate fiend. Whole bags of Reese's disappear in miliseconds.
